WHAT IS AGAVE SYROP?
Agave syrup is made by thickening the juice of the agave plant, a cactus-like plant from South America.
Agave syrup is very sweet, 25% sweeter than regular granulated sugar, so we have to use less of it to obtain a sweet taste. The agave nectar has a much lower glycemic index than ordinary granulated sugar. A low glycemic index ensures that the energy is gradually released into the body, which is better for your body than the rapid sugar intake of regular sugar.
This is because granulated sugar is chemically different from agave syrup. Normal sugar consists of sucrose, half of which consists of fructose and the other half of glucose. Agave nectar in its pure form contains 90% fructose, the rest is glucose. Because of its extremely high fructose content, agave syrup has a low glycemic index.
WHAT IS THE GLYCEMIC INDEX?
The glycemic index or GI is a measure of the increase in blood sugar levels after a meal.
Carbohydrates that are rapidly broken down during digestion and release their glucose quickly into the bloodstream have a high glycemic index. Foods with a low GI do not cause a blood sugar levels to rise and therefore cause no insulin peak.
Insulin makes you hungry. When eating foods with a high GI, insulin production quickly increases. The released sugar is quickly transported to the cells where it is absorbed. The sugar has been absorbed, but is there still insulin in the blood? The result is that the cells are fed, yet the sugar concentration in the blood rapidly decreases, which you experience as a hunger craving.
