INGREDIENTS (for 6 mini cakes)
125 grams of XAVIES' Nuts & Seeds or XAVIES' Nuts Chocolate
4 tbsp maple syrup
3 tbsp melted coconut oil
2 egg whites
1 tsp cinnamon
Toppings: Greek yogurt, lime, fruit of choice (blueberries, raspberries, juniper berries)
PREPARATION
Preheat the oven to 175 degrees Celsius (hot air/convection mode).
Combine all the ingredients for the base in a bowl.
Make sure the mass feels sticky to the touch. Coat a cake pan with a light layer of oil.
Spread the granola mixture evenly over the base of the pan and press it down firmly. Make sure to press it firmly against the edges as well. Place the base in the oven and bake for 20 - 25 minutes until golden brown.
When finished, allow it to cool completely, and carefully remove the cake from the pan.
Mix the Greek yogurt with some lime juice and pour it onto the granola cake. Decorate the cake by adding the fresh fruit on top.
