My favorite breakfast when I'm short on time? Banana muffins with granola. 🍌
Make them on Sunday, and you'll have a batch ready for the rest of the week. Or freeze them: handy during weeks when your schedule is hectic. Made with banana, eggs and our Banana Chocolate Granola.
They're delicious and filling, so you won't be raiding the cupboard again by 10 a.m.
Ingredients (for 9 muffins)
- 2 ripe bananas
- 2 eggs
- 80 g whole wheat flour
- 80 g white flour
- 50 ml milk
- 60 g Banana Chocolate Granola
- 1 tsp vanilla extract
- 1 tsp baking powder
- pinch of salt
Preparation
Preheat the oven to 180°C.
Mash the bananas in a large bowl. Mix in the eggs and vanilla. Add the flour, baking powder and salt and mix briefly until you have a smooth batter. Carefully fold the granola into the batter.
Divide between the muffin liners and top with extra granola. Bake for 20 to 22 minutes until golden brown and fluffy.
