Ingredients
- 250 g flour
- 250 ml (vegetable) milk
- 100 g egg yolk (or 5 yolks)
- 25 g sugar
- a dash of vanilla syrup
- 7 g baking powder
- 1 tbsp matcha powder
- 150 g egg white (or 5 egg whites)
- handful of Matcha Granola
Preparation
Combine the flour, milk, egg yolks, sugar, vanilla syrup, baking powder, and matcha powder in a mixing bowl and whisk briefly until smooth. The less you stir, the fluffier the pancakes will be.
Beat the egg whites until stiff and frothy. Gently fold them into the batter, using gentle movements to maintain the airiness.
Heat a pan with a little oil or butter and fry small portions of batter until golden brown on both sides.
Stack the fluffy matcha pancakes on a plate and top with seasonal fruit, yogurt, and our crunchy Matcha Granola. Then all that's left to do is enjoy. 😋
