This banana and carrot bread is a delicious twist on classic banana bread. It features crispy granola packed with seeds for a crunchy touch. This recipe is delicious for breakfast in the morning with some Greek yogurt and fresh fruit, or as a snack when you suddenly feel hungry.
This is what you need
- 2 ripe bananas
- 150 g grated carrot
- 3 eggs
- 3 dates
- 100 ml almond milk
- 100 g almond flour
- 150 g oat flour
- 100 g XAVIES' Nuts Seeds Granola
- 1 tsp baking powder
- 2 tsp cinnamon
This is how you prepare it
Preheat the oven to 180°C and grease a baking tin.
Mash the bananas, finely chop the carrot, and crush the dates in a bowl. Then add the almond milk and eggs.
In a separate bowl, combine the almond and oat flour, granola, baking powder, and cinnamon. Add to the wet ingredients and stir well.
Pour the dough into the greased baking pan and bake for 35-40 minutes. Use a skewer to test if your banana and carrot bread is done. If the skewer stays clean, it's ready to remove from the oven.
Let it cool and then remove from the baking pan. It tastes delicious with Greek yogurt and fresh fruit. Enjoy!
