A festive dish that's both simple and surprising: salmon with a crispy crust of XAVIES' Nut Seeds, Parmesan, and fresh lemon zest. Perfect as a main course at a dinner party or as a light yet flavorful weeknight meal.
This is what you need
- 4 pieces of salmon fillet
- flower
- 1 beaten egg
- 50 g XAVIES' Nuts Seeds
- 30 g breadcrumbs
- salt and pepper
- 1 tbsp lemon zest
- 2 tbsp freshly grated Parmesan
This is how you prepare it
Preheat the oven to 180°C.
Preheat the oven to 180°C (350°F) and line a baking dish with parchment paper. Place the flour in a shallow dish, season with salt and pepper, and coat the salmon in it. Tap off any excess flour and place the fillets in the baking dish.
Brush the salmon with the beaten egg to ensure the crust sticks well. Finely grind the granola in a food processor and mix with the breadcrumbs. Cover the salmon fillets with this mixture and press down lightly. Sprinkle with lemon zest and a thin layer of Parmesan cheese.
Bake the salmon in the oven for 15 to 20 minutes, until the crust is golden brown and crispy and the salmon is cooked through.
